With a new Chef and a new season coming, it is time for a new menu as well. The talented chef Milen Zlatev has prepared a tempting menu for our teaching restaurant - Talents with seasonal products and unique combinations of flavors and fragrances.
All the recipes on the menu are unique and carefully selected by our young but virtuoso chef and you are about to bite into something ambitious.
Chef Milen presents familiar products and tastes in unfamiliar forms using different culinary techniques, and one of his favorite is to transform different fruits or vegetables into powders in order to extract maximum aromas and to elevate the flavors into something unique and unforgettable.
Among the most preferred dishes on his menu are:
Beef carpaccio with olives powder and crispy parmigiano reggiano cheese;
Goat cheese mousse with sun dried tomato and fresh herbs emulsion;
Tender beef steak garnished with Italian chestnuts ravioli with duxelle, grilled cauliflower and caramelized onion sauce.
The rich menu of chief Milen lurks also some seductive and sweet surprises. One of his favorite ingredient to cook with is the chocolate and he reminded us that “the chocolate is the food of the Gods”. Therefore, it is not a surprise that his favorite dessert from the menu of the teaching restaurant - Talents is the Chocolate delice with lime jelly and coconut espuma. Be careful with it, as it is extremely addictive.
All the dishes from the new menu are carefully selected to cover broad range of culinary techniques and different kinds of products with the students in mind, because the menu is cooked and served by the students of HRC Culinary Academy.
