Antonio Ivanov and HRC Students

On April 11th, first semester students at HRC Culinary Academy had the exceptional opportunity to attend a masterclass led by one of Bulgaria’s most renowned chefs – Chef Antonio Ivanov, currently the head chef of Quché restaurant in Sofia. With a career that spans over a decade and accolades that speak to his talent and dedication, Chef Antonio Ivanov brought not just a dish, but a philosophy to the kitchen: great food doesn’t need to be complicated.

Chef Antonio Ivanov: From National Honors to Global Recognition

Antonio Ivanov first captured the attention of the culinary world in 2013 when he received the prestigious title “Chef of the Year” in Bulgaria. Just two years later, in 2015, he was chosen as the national qualifier for Bocuse d’Or, the most esteemed culinary competition in the world. Representing Bulgaria in the 2016 edition in Budapest, Chef Antonio Ivanov showcased not just his technical expertise but also his commitment to putting Bulgarian cuisine on the global map.

A Philosophy Rooted in Simplicity

During the masterclass, Chef Antonio Ivanov aimed to dismantle the misconception that fine dining requires overly complex techniques or obscure ingredients. He shared that students don’t need fancy powders to make impressive dishes. His focus was on clarity of flavor, solid technique, and respect for ingredients—a lesson that resonates strongly with HRC’s teaching philosophy.

The Dish: Refined and Honest

The dish Chef Antonio Ivanov presented was a refined yet humble composition, drawing influence from Nordic and French culinary traditions. The centerpiece was fish, delicately prepared and complemented with cabbage, celeriac purée, and other thoughtfully chosen elements. What stood out was not just the final plate, but the journey he took students on—from deboning the fish, to preparing each component with care, and finally, to the art of plating.

Hands-On Learning in Real Time

Students were not just passive observers in this masterclass. Chef Antonio Ivanov actively engaged them in each step, offering insights and encouraging them to try the techniques themselves. The hands-on nature of the session turned it into a collaborative experience, allowing young chefs to build confidence in their skills while learning directly from a master of the craft.
