HRC Culinary Academy visiting Professional high school of food technologies, Dupnitsa

Chef Lyuben Koychev presented basic techniques for arranging dishes


At the end of last week, we had the opportunity of meeting students and teachers from the Professional high school of food and chemical technologies, specialty “Production of Culinary Products and Beverages”, Dupnitsa.

During the presentation, the students were able to learn more about the Academy, get to know our culinary programs, and find out everything about our paid internships. Raya, our new addition to the team, shared her experience with the internships and her path in the Culinary World after graduating from our Culinary Arts program. After the presentation, the talented chef Lyuben Koychev presented basic techniques for arranging dishes, explained what “Food plating” is and why it is so important, as well as what tools are used for it. His version of a deconstructed tarator turned out to be very interesting for everyone.

The students had the opportunity to try out some of the main techniques in the basic arrangement themselves (such as vertical and horizontal lines, arcs, and twists), try out the smokers, and see how to work with liquid nitrogen.
