This week we had special guests from Zuma, ROKA and Oblix:
Chef Hamish Brown – Group Executive Chef for ROKA
Chef Julien Philippe – Group Pastry Chef for Zuma, ROKA and Oblix
Simon Dallyn – Global Recruitment Manager.
During the visit they made an awesome culinary demonstration for our 1st and 3rd semester student and they managed to conduct several interviews with our talents. We are proud that 3 of our student will join them in UK and 2 in the USA.
During the demo Chef Hamish Brown prepared Beef Tataki - made with meltingly tender beef fillet, topped with crisp tapioca and fresh truffle, while Chef Julien Philippe presented a classic with a ROKA-style twist: Black Forest cake with Sakura liquor and smoked coconut ice cream.
It was a very delicious presentation and cannot wait to welcome the ROKA team at HRC Academy again!
