Dr John Dunning on on the Professionalism: achieving wine sales in restaurants and the role of the sommelier
Lecture in English language + Wine Tasting
Dr John Dunning is Principal Lecturer at Sheffield Hallam University - Hospitality (Department- Service Sector Management).
He studied Hospitality Management at Cambridge and then Norwich Hotel School. This was followed by several years working at Claridge's and the Savoy Hotel in London in both Food and Beverage and Rooms Division positions. Assistant Food and Beverage Manager and Restaurant Manager roles in London Hotels. The London experience was followed by working abroad for several years, particularly in France, Monaco/Monte Carlo, Switzerland, Jersey, Channel Islands. Experience in other countries including Italy, Australia, Thailand and Holland.
Stage in America for the late Charlie Trotter.
Taught Hospitality Management in England and Holland.
Worked as the Training Manager for Gordon Ramsay Holdings, London, for over three years and also did consultancy work on behalf of Gordon Ramsay.
