The academy’s chef instructors have earned their credits in the culinary field. They are able to enthusiastically explain and demonstrate cooking techniques which will motivate students to develop their skills.
Robin Villarreal Monserrate
Head Chef Instructor
Robin Villarreal is a trained Chef with a diploma from Le Cordon Bleu Académie D´Art Culinaire De Paris. Besides his sound knowledge and experience in French and International Cuisine, Robin’s specialty areas are Pastry, Bakery and Thai Cuisine. Chef Robin brings with him a wealth of teaching experience from renowned international culinary schools, to include Le Cordon Bleu Académie D´Art Culinaire De Paris and Glion Institute of Higher Education Switzerland.
As Executive Chef, Robin Villarreal has been instrumental in the opening of the Glion Institute of Higher Education in Mexico. Chef Robin speaks English, Spanish and Tagalog fluently and is also a certified pilot.
Eduardo Cortés

Instructor
Chef Eduardo Cortés brings to the Academy a wealth of culinary teaching experience. A graduate of the renowned Le Cordon Bleu Académie D´Art Culinaire De Paris, Chef Eduardo has worked as a culinary instructor at a variety of culinary schools.
During his career, he enjoyed a 6-year stay in beautiful Edinburgh Scotland, where he worked as a Head-Chef. He then moved into the teaching field, teaching both Cuisine and Pastry at culinary schools in Mexico, including ECI Escuela Culinaria Internacional and the Swiss-based Glion hotelschools. Chef Eduardo can best be described as an all-rounder, being well versed in French and Italian cuisine, Baking & Pastry, Chinese and Indonesian Cuisine. Back home in Mexico, Chef Eduardo also hosted his own culinary show on television.
Chef Eduardo is now returning to Europe again, a continent he appreciates very much.
Nikolay Stefanov
Teacher
Mr. Nikolay Stefanov teaches Restaurant operations and F&B management at the Academy. In the third semester of our students he coaches them in our Restaurant Talents.
Being a Bulgarian native, he received his Bachelor degree in hotel management at the International University College. After working in the luxury leisure industry at the Bulgarian coast as well as in hotels in Cyprus, Nikolay moved to the United States. Here he worked as Restaurant manager for the leading hotel brand of Marriott. His experience at the multiple F&B outlets of this award winning 5-star hotel resort Grand Marriott, Nikolay brings across to his students.
Nikolay is a professional barista and a member of the sommelier & restaurant organizations in Bulgaria.
Renowned chefs from top hotels and restaurants around the world and guest instructors from European partner schools make their appearance at the academy. They share their experiences, talk about the latest culinary trends and explain established traditions. The opportunity to learn from some of the world’s best chefs is a great advantage of the program.
