Fusion is coming to HRC

On friday 22 of August, Chef Jordi Altuzar performed in the HRC Culinary Academy a Mexican Bulgarian fusing of ingredients and taste.  “It is obvious that one cannot make traditional Mexican food in Bulgaria, but we can try to adapt the Mexican style cuisine to the Bulgarian ingredients and taste.”  said chef Altuzar.

It is important to point out that adapting a foreign cuisine for a local taste is a very difficult and delicate.  It is difficult to adapt because of the different taste and appearance.   It is delicate because of the ingredients that make up the dish.  These ingredients have to be selected carefully so as keep the essence of the foreign dish alive.  However here at HRC Academy we are bringing a new way of looking at food.  To experience the unknown inhibits fear and brings acceptance.
